Mother’s Day

Mother’s day is less than a week away and if you haven’t thought about how to show appreciation to your mama, grandmother, aunt, sister, friend or whoever you might be celebrating on that day, it’s time to start planning! Making someone’s day special during a pandemic has its challenges. You can’t go and purchase anything non-essential and mail delivery is not reliable (if you’re living somewhere that isn’t currently experiencing these challenges, well, we are jealous!). Most of us are just keeping our heads above water during this exceptional time, and even thinking about a special Mother’s Day gift or gesture feels like an extra thing on our to do lists. Well, if this is you (and even if it’s not) keep reading.

The cliché “It’s the thought that counts” speaks true to most gifts and what you do for that special someone on Mother’s Day is no exception. While it’s perfectly acceptable to order off amazon and have it delivered directly to your loved one, putting some extra love and effort into a Mother’s Day gift does not go unnoticed; it is the one day a year that you say thank you to your mother (or loved one) for always putting you first. Lucky for you, we have done all of the thinking and your only job is to execute! Below you’ll find a recipe for the most delicious, homemade muffins that are SO easy to make and they require very few ingredients.

Ingredients

  • 2/3 cup of brown sugar
  • ½ cup of salted butter (melted)
  • 2 eggs*
  • 2-3 mashed ripe bananas
  • 1 ½ cups of all purpose flour
  • A pinch of salt
  • 1tsp baking soda
  • ¾ cup of chocolate chips (or frozen blueberries)

 

*One Egg Replacement: 1 tbsp. of ground flax mixed with 3 tbsp. of filtered water. Let it stand for 10 minutes prior to mixing into recipe

Method

First, preheat the oven to 350 degrees F. In a large bowl, mix the melted butter and brown sugar until well combined. Add the mashed bananas and eggs and mix well. In a separate bowl, combine the dry ingredients; flour, baking soda, and salt. Lastly, mix the wet and dry ingredients together and add the chocolate chips (or frozen blueberries), mix some more. Your muffin batter is now ready! Grease your muffin cups, or use liners, and fill each cup with the batter evenly. Bake for approximately 15-18 minutes and voila, your delicious homemade muffins are ready! These muffins taste best fresh but also freeze really well!

Serve with some freshly squeezed orange juice, delicious fruit and lots of love!
